Peruvian Gastronomy

Cook well and understanding of good food is perhaps the most widespread habit among Peruvians.  When we hear a Peruvian that ours is the best cuisine, always remember this audacity  gives us to think that if it is sixth sense, Peruvians have twice the taste.

Our identity is shaped in the kitchen:  we are demanding diners and, many, magical cooks.  Democracy we live in our tables:  there will always be a space for a fresh flounder device,  pisco sour or a Chiclayan rice with duck.

We express our ability to integrate eating chifa, proper name of China kitchen in Peru. Endless and colorful banquets that demand silence and discipline, bite after bite allow us to appreciate what diversity really means.

Eating in Peru, is a journey in itself.  From the prodigious Peruvian sea from where our ceviche come out, through the Andes and hundreds of potato variety, to the Amazon, loaded with exoticism of a mysterious and natural kitchen.


Among the main typical Peruvian foods  are: 

Ceviche: Undoubtedly King of Peruvian food.  Prepared with fresh fish cut into pieces and cooked with lemon;  we add chili and onions.  It can be a boiled sweet potato, a boiled potato, cooked corn kernels and cancha (toasted corn). 

Carapulcra: The oldest mixed meal that one is aware.  Indian soup prepared from  dried potatoes cooked with pork and chicken,  mirasol and red pepper, garlic and other species.

Anticuchos: Beef heart skewers marinated in vinegar and red pepper sauce, and then fried on the grill.  Accompanied with boiled potatoes, and hot pepper..

Lomo saltado: Beef tenderloin cut into strips and sautéed with onion, tomato, hot pepper, and various herbs.  Served with fries and rice.

Causa rellena: Yellow potato pasta seasoned with yellow pepper, filled with tuna.  You can also fill it with chicken.  And some first class restaurants present it with crab meat.

It happens, that Peru was gifted with lands and seas with divine abundance  and Peruvians, from centuries, appreciate this gift cooking, eating and creating, as the gods do.  This is Peru and  its flavors  invite you to  know it.
